Mango Coconut Energy Balls

    Ingredients:

    • 1 package freeze dried mango
    • 1 cup raw cashews
    • 1/2 cup shredded coconut plus more for rolling if desired
    • 1 cup medjool dates pits removed (about 10 – 12)
    • 1/2 teaspoon turmeric powder
    • 1 tablespoon water or maple syrup

    Instructions:

    1. Add the mango to a food processor and grind until a fine powder forms.
    2. Add remaining ingredients (minus water) and blend again until completely combined and starting to form a dough.
    3. If needed, add 1 tablespoon of water and continue to blend until the dough forms a ball.
    4. Form dough into little balls, rolling in shredded coconut if desired.
    5. Store the balls in an airtight container in the fridge or freezer.
